The truffle is a true environmental sentinel, because as soon as the best environmental conditions are lacking, it stops proliferating.
Where there is truffle, there is no pollution. Because of its characteristics and the symbiotic relationship it establishes with the surrounding nature, the truffle has a high standard of biodiversity, thus forcing man to protect the environment.
For truffles to exist, symbiotic trees and plants, fertile and moist undergrowth, well-developed root systems and a vibrant soil microflora are required.
